Ingredients for elderberry jam:
- 50 dkg of elderberries – let’s just pick black berries
- 30 dkg of sugar

Well-ripened black elderberries, like redcurrants, should be pulled off the stem with a fork and then poured over as much water as will cover it. Very important! Be careful when picking, because the stems of the berries are thick with tiny black beetles, don’t even pick them because it’s very hard to wash them. Only the black berries are good, on which even lighter colors are not appropriate, let them be discarded!
Any elderberries that come to the top of the water must be discarded. Wash the elderberry in at least two or three juices, then put it in a filter, and when it has drained well, put it in a bowl and pour the lemon juice on it and pour it over the water. If we find a non-black berry be sure to throw it out because it can be slightly toxic !!
Add the sugar, vanilla sugar and sprinkle it with a little cinnamon. Peel an apple, grate it and stir in the elderberry. Boil it while stirring. Cook it for approximately 20 -25 minutes, while the elderberry grains collapse slightly. Once the apple has softened, remove from the heat and sprinkle with jam fix or gelatin, mix it well, then spoon into clean jars. Set the jars on their heads for a few minutes, then invert and allow to cool.
Ingredients for elderberry lemonade in a 5 liter bottle:
- 10-13 large elderflower umbrella
- 1 lemon
- 60 dkg sugar – stivia, birch sugar can also be used instead of sugar
Into the well-washed bottle I 4 l of water add the sugar and citric acid and mix it well. Before I put the flowers on the top I look through the flower so that they haven’t got lice, I rinse the stem well but not the flowers and then I put them in the mixture with the flowers down. Slice the thoroughly washed lemon with its skin and put it among the flowers. It has to be covered, I mature it for 2-3 day while stirring twice a day. Then I filter it and store it in the fridge.
Ingredients for elderberry syrup for 5 liters:
– 18-22 large elderflower umbrella
– 4.5 l of water
– 1kg of sugar -stivia, birch sugar can also be used instead of sugar
– 1 lemon
– 3-4 g of citric acid
Pour the warm sugar syrup into the well-washed bottle – put the sugar in 2,5 l of water and boil it, then thicken it a bit, then slowly add the rest of the water and let it cool down. I put the washed flowers in the bottle with flowers down, put the lemon rings and citric acid among the flowers. I mature in a cool place for about 4-5 days, filter it and store in jars in the fridge.

The red elderberry is distinguished from black elderberry by the color of the fruit, the fruit of red elderberry is deep red. Its confusion with its companion usually causes mild plant poisoning with vomiting and diarrhea.
